This tart is quick and easy to make, using a readymade pastry, it can be prepared ahead of the meal and baked while you’re eating, to be just ready when it’s time for dessert.

 

Ingredients
Serves 4

Readymade puff pastry
2 apples
2 tsp of cane sugar
1 tsp vanilla seeds
4 scoops vanilla ice cream to serve.

Preheat the oven to 200°C. Using the rim of a bowl as a template, cut out four discs of pastry approximately 15cm in diameter, and place them on a baking tray lined with greaseproof paper.

Peel, core and thinly slice the apples. Arrange the slices in a circle over the pastry, leaving a 1cm edge all around for some crust. Place one or two thin slices of butter over the apples, sprinkle over a teaspoon of sugar and some vanilla seeds. Bake in the oven for about 20 minutes or until the pastry is golden brown. Serve hot with a scoop of vanilla ice cream in the middle.
